Soon I’m off to PEI again so I’ve made another road trip meal prep plan! This year I have a cooler that keeps things cold for 5 days so I’m excited to test out that claim. I’ve still chosen things that would keep well and taste good cold. My meal prep is more heavy on snacks this time because the leftovers are great to grab during holiday while exploring around!

Salad – Cowboy Caviar from Budget Bytes
Snack – Healthy Cookie Dough Dip from Chocolate Covered Katie
Sandwich – Smashed Chickpea Salad Sandwich from Vanilla and Bean
Bites: Chocolate Peanut Butter Energy Bites from Bless This Mess (9 recipe options!)
Trail Mix – Quick and Easy Trail Mix from The Conscious Cleanse

Shopping list

Produce

  • sprouts – chickpea sandwich
  • kale – chickpea sandwich
  • 3 roma tomatoes – chickpea sandwich, cowboy caviar
  • 1/4 cup purple onion – chickpea sandwich
  • 2 tsp fresh dill – chickpea sandwich
  • 1 bell pepper – cowboy caviar
  • 1 jalapeño – cowboy caviar
  • 1/4 red onion – cowboy caviar
  • 1/4 bunch fresh cilantro – cowboy caviar

  • 1/4 cups + 1 tbsp dill pickles – chickpea sandwich
  • 2 tbsp vegan mayo – chickpea sandwich
  • 2/3 cup brown sugar – cookie dough dip
  • 1/4 cup milk of choice – cookie dough dip
  • 1/3 cup chocolate chips – cookie dough dip
  • guten-free bread – chickpea sandwich
  • 2 1/2 tsp stone ground mustard – chickpea sandwich
  • 1 1/2 tsp apple cider vinegar – chickpea sandwich
  • 15 oz. can black beans – cowboy caviar
  • 15 oz. can black eyed peas – cowboy caviar
  • 2 tbsp olive oil – cowboy caviar
  • 1/2 tbsp balsamic vinegar – cowboy caviar

Seeds, Nuts

  • 1 cup dates – peanut butter energy ball
  • 3/4 cup peanut butter – peanut butter energy ball, cookie dough dip
  • 2-3 tablespoons cocoa powder – peanut butter energy ball
  • 1/4 cup peanuts – peanut butter energy ball
  • ½ cup cashews, raw and unsalted – trail mix
  • ½ cup walnuts, raw and unsalted – trail mix
  • ½ cup pumpkin seeds, raw and unsalted – trail mix
  • ½ cup sunflower seeds, raw and unsalted – trail mix
  • 2 tbsp raisins – trail mix
