Vegan Gluten Free Thanksgiving Menu 2017

People are always asking me what I eat so I thought I’d share my vegan gluten free Thanksgiving menu for this year!

Here’s what I had planned:

Thanksgiving Meatless Loaf from Fat Free Vegan

Simple Vegan Stuffing from Minimalist Baker

Creamy Vegan Scalloped Potatoes from Edible Perspective

Quick Vegan Onion Gravy from It Doesn’t Taste Like Chicken

Aquafaba Marshmallow Topped Sweet Potato Casserole from I Love Vegan

I <3 Kale Salad from Undiet by Meghan Telpner but this recipe is similar

I was working the evening shift this week and I was leaving for the cottage Friday afternoon so I made a schedule to break up the work. It’s much easier to pull off if you don’t try to do it all at once!

Wednesday Before Work

  • soak cashews (1 cup)
  • grate onion (about 3 cups)
  • grate carrot (1 cup)
  • dice celery (1 1/4 cups)
  • juice lemon (1)
  • chop sweet potato (1)
  • cook white beans for the thanksgiving loaf in the instant pot (and set aside aquafaba)

Thursday Before Work

  • blend gravy
  • blend scallop potato sauce
  • blend tahini dressing
  • blend aquafaba marshmallow topping
  • defrost bread (I had a loaf of this gluten free multigrain bread in the freezer)
  • gather herbs from garden


  • cook stuffing (350 degrees for about 1 hour)
  • cook scalloped potatoes (350 degrees for about 1 hour)
  • cook sweet potato casserole (350 degrees for about 20 minutes)
  • cook thanksgiving loaf (375 degrees for about 45 minutes)
  • assemble salad

It’s too late for my Canadian friends this Thanksgiving but all of those work excellent for Christmas as well. I’ve been rather sick with a cold this week so I didn’t actually pull this off but it’s a solid plan I’ll be reusing later 😉 I’ll probably plan to do either scalloped potatoes or the sweet potato casserole but not both next time. I ended up just having the Thanksgiving Loaf, gravy, and stuffing. It’s going to be Thanksgiving all week as I cook up the rest!
