My gluten free vegan road trip meal prep for the drive to PEI is done and I’m on my way! I’m writing this from the car. Road trips can be filled with unfortunate food compromises so I prefer to prep ahead of time! I want to arrive feeling well so I can enjoy my holiday.
All of the things I made taste good without needing to be heated up. To split up the cooking a bit, I made the baked goods on the weekend and froze them. The Cliff Bars could be made ahead of time and put in the freezer as well. I’m hoping to have some left for the trip home too but we’ll see 😉
