This lazy instant pot vegan pasta recipe is super simple and my favourite for busy nights! I swear I make it like once a week. Pressure cooking gives the pasta a bit of a different, softer texture that I enjoy even more. I try to always keep the ingredients on hand in case I need a quick meal! By keeping the frozen veggies on top and reducing the usual cooking time for instant pot pasta, they don’t get burnt or overcooked. I love using frozen broccoli mixes and roasted veggie mixes especially.
Lazy Instant Pot Vegan Pasta (gluten free)
- 2 cups pasta gluten-free
- 1 cup pasta sauce
- 1 1/2 cup water
- 1 handful non-dairy cheese optional
- 1-2 cups frozen veggies
- Add all the ingredients into the pot. First I add the pasta, then the pasta sauce and water, followed by the non-dairy cheese, with the frozen veggies as the top layer.
- Secure the lid and using the manual setting, cook for 2 minutes on high pressure with natural release.
- Transfer the pasta to a bowl and let it cool for a few minutes before enjoying.
