Back when I indulged in dairy, I used to adore frietsaus (fry mayonnaise). I find it a bit sweeter than regular mayonnaise and absolutely delicious. I wanted to capture that essence in a healthier form so this versatile creamy cashew sauce was born!
The maple syrup adds the sweetness but feel free to experiment with whatever is local to you. I love maple syrup because my family makes it! Maple syrup contains important nutrients like manganese and it contains up to 24 antioxidants.
According to The World’s Healthiest Foods, flaxseeds are the best plant source for Omega-3 fatty acids which are important for a balanced Omega-3 to Omega-6 ratio. I like to use flaxseed oil in uncooked sauces for an extra health boost.
Apple cider vinegar helps with stabilizing blood sugar and digestive health.
Creamy Cashew Sauce
Yield 1 1/2 cups
A creamy cashew sauce with a hint of sweetness and ingredients specially selected to be health building. It goes especially well with roasted veggies, like potatoes, and salads.
- 1 cup cashews (pre-soaked)
- ½ cup water
- 2 tsp maple syrup
- 2 tbsp apple cider vinegar
- ½ tsp salt
- 2 tbsp flaxseed oil
- Add all the cashew sauce ingredients to your blender and blend until smooth. If the sauce is too watery, throw in a few more cashews until it's your desired consistency.
Soaking the cashews not only makes them easier for your blender to blend and helps make the sauce creamier but it also reduces phytic acid
